I thought I had a bunch of eggs and was in the middle of making a quiche when I discovered I really only had four. So I made the quiche, but then I had also planned on making some cookies, so I searched on allrecipes.com for peanut butter cookies without eggs. I love their recipe search where you can omit an ingredient that you don't have or don't want to use. This recipe for Eggless Peanut Butter Cookies sounded simple and I had all the ingredients, so I tried it. I made a couple of changes to it and the cookies turned out yummy.
My Changes:
1. I only wanted to use one stick of butter, so I cut the recipe in half.
2. I used butter instead of shortening.
3. I used maple syrup instead of the brown sugar (same amount).
4. I didn't have buttermilk, so I just used 1% milk with a splash of white vinegar added to it.
5. I added chocolate chips and chopped peanuts.
The best part about these cookies is that since there are no eggs, you can eat as much of the batter as you want and not worry about it!
